Greek Pasta Salad

Leah's Family Recipe
Delicious orzo Mediterranean salad perfect for a side dish or lettuce wrap filling! We love making this quick and easy recipe as a fresh appetizer for family dinners. It's a fool-proof crowd pleaser!

Ingredients

¾ cup raw orzo - cook + cool
1 garlic clove, finely chopped
¼ cup olive oil
4 tbsp lemon juice
½ tsp salt
½ tsp pepper

¼ cup green onion
¼ cup cucumber
¼ cup tomato
¼ cup bell pepper – any colour

1 tbsp dried parsley
200-gram feta cheese, drained

Optional Add-Ons:
olives, dill, spinach, oregano

Method

Mix together garlic, oil, lemon juice, salt and pepper.

Remove seeds from cucumber and tomato. Finely chop and drain vegetables.

Stir together orzo, oil mixture and vegetables.

Add parsley and feta cheese.

Refrigerate for 2 hours.

Enjoy!

P.S. this also makes a great filling for lettuce wraps :)
